Happy Motorcycle to Work Day! I commuted on my bike (of course I commuted on my bike!) and was pleasantly surprised that the weather-gods smiled upon us two-wheel aficionados.
Taking advantage of the unexpected sunshiny weather, Boyfriend and I rode the bikes up to Lynnwood to visit the Piggyback Deli. Piggyback was recently started by a fellow skydiver who is a chef, a butcher, and a charcutier. The food far outclasses the location ( inside a gas station convenience store). The food…oh mama.
Boyfriend chose to try the Porchetta sandwich which consists of seasoned and roasted pork belly, pork tenderloin, cracklings, arugula and a sauce verte on a ciabatta roll. I went with the Spicy Pork sandwich which is marinated pork loin, Gruyere cheese, pickles, Dijon mustard, and a homemade aioli on a french roll.
We also took home a couple of Piggyback’s andouille sausages so I’ll be making some Jambalaya this week!
